1 pound bay scallops
4 medium green onions, sliced (1/4 cup)
1/4 teaspoon salt
1/8 teaspoon white pepper
1 garlic clove, finely chopped
1 package (9 ounces) frozen artichoke hearts, thawed and drained
1 cup cherry tomato, cut in fourths
1 cup shredded spinach or romaine
1 tablespoon lemon juice

1. Cook scallops, onions, salt, white pepper and garlic in 10-inch nonstick skillet over medium-high heat 4 minutes, stirring frequently, until scallops are white.
2. Stir in artichokes, tomatoes and spinach. Cook, stirring occasionally, until tomatoes are hot and spinach is wilted; drain. Sprinkle with lemon juice.

I discovered this recipe a number of years ago at Kraft. It has become one of my husbands favorites. I marinate the salmon in the dressing for about an hour before cooking. I also use any brand of sundried tomato vinagrette dressing that is available at my local market. I usually do not serve anything else with it as the spinach tomatos and mushrooms make it a filling dish.
4 salmon fillets (1 lb.)
2 cups chopped fresh spinach leaves
1 cup sliced fresh mushrooms
1 tomato, chopped
1/3 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
Make It

HEAT oven to 375°F.

PLACE fish fillets, skin-sides down, in 13×9-inch baking dish sprayed with cooking spray.

COMBINE remaining ingredients; spoon over fish.

BAKE 20 to 25 min. or until fish flakes easily with fork.

spinach, artichoke, and crab dip

1 8oz block of cream cheese
1/2 C. sour cream
1/2 C. mayonnaise
2 tsp. Worcestershire sauce
1/2 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. cayenne pepper
1 Tbs. Dijon mustard
zest and juice of 1 lemon (save a sprinkle of zest to go on top)
salt and pepper to taste
1 10 oz. pkg of frozen, chopped spinach (thawed and drained very well)
1 14 oz. can artichoke hearts in water (cut into 1/2 inch pieces)
4-6 green onions, sliced thin (greens and whites, about 1/2 C.)
1 8 oz. can water chestnuts (chopped)
1 C. shredded parmesan, romano, asiago cheese blend (save a sprinkle for the top)
1 8 oz. tub fresh crab, picked clean of shells (claw meat is fine for this, lump is extra special but not necessary in this dip)

1. preheat oven to 350 degrees.
2. prepare 2 QT casserole with cooking spray.
3. In a mixing bowl, blend cream cheese, sour cream, mayo, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, dijon mustard, lemon zest and juice, and salt and pepper.
4. Add spinach, artichokes, green onions, and water chestnuts.
5. Mix well.
6. Stir in cheese.
7. Carefully fold in crab, so as not to break up the meat too much.
8. Pour into prepared casserole.
9. top with reserved zest and cheese.
10. Bake at 350 for 40-45 minutes, or until dip is bubbly and golden brown.

The hubby and I were experimenting the other night for dinner and came up with this. It was very good. For those of you who do not like seafood you could easily substitute chicken for the shrimp just follow the recipe otherwise. I used thin spaghetti for the pasta but you can use whatever type of pasta you prefer.

1 6 oz. tub tomato/basil feta

1/2 box thin spaghetti

1 12 oz. bag broccoli florets

1 24 oz. bag jumbo shrimp

At least three cups of Greek vinaigrette dressing

Marinate shrimp with half of dressing for at least one hour.

Heat the grill to medium-low to medium. Note – I used a grill grid, so I had it in place before even lighting the grill.

Prepare pasta according to package directions concurrently while preparing the broccoli and shrimp.

Stir broccoli with other half of dressing. When the grill is hot, place the broccoli on the grill grid in a single layer. After about 6-8 minutes of grilling the broccoli, place the shrimp right on the grid with the broccoli. Cook shrimp until all are cooked and opaque.

Remove broccoli and shrimp from grill. Drain pasta and toss feta with pasta. Combine broccoli and shrimp with pasta.

Serve and enjoy…

Additional note: This was all an experiment with no recipe. It worked out very nicely. I eyeball most of my stuff (amounts and temperatures and such) when I cook, so good luck!

Roasted Shrimp and Orzo

    * Kosher salt
    * Good olive oil
    * 3/4 pound orzo pasta (rice-shaped pasta)
    * 1/2 cup freshly squeezed lemon juice (3 lemons)
    * Freshly ground black pepper
    * 2 pounds (16 to 18 count) shrimp, peeled and deveined
    * 1 cup minced scallions, white and green parts
    * 1 cup chopped fresh dill
    * 1 cup chopped fresh flat-leaf parsley
    * 1 hothouse cucumber, unpeeled, seeded, and medium-diced
    * 1/2 cup small-diced red onion
    * 3/4 pound good feta cheese, large diced

Directions

Preheat the oven to 400 degrees F.

Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it’s cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well.

Meanwhile, place the shrimp on a sheet pan, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine and spread out in a single layer. Roast for 5 to 6 minutes, until the shrimp are cooked through. Don’t overcook!

Add the shrimp to the orzo and then add the scallions, dill, parsley, cucumber, onion, 2 teaspoons salt, and 1 teaspoon pepper. Toss well. Add the feta and stir carefully. Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. If refrigerated, taste again for seasonings and bring back to room temperature before serving.

   The other day I was looking for a different way to make salmon.   We have plenty recipes that I use regularly for salmon.   My husband stumbled across the recipe for Thai Barbecued Salmon.   For the benefit of those who do not subscribe to the magazine I will post the recipe here as well.   It was so easy to make and very tasty.   I am posting the recipe as is but letting you know that I chose to use flat leaf parsley in place of cilantro.  Not really a fan of cilantro.  Other than the minor change I made I would still recommend this recipe and will absolutely without a doubt make it again.   It was not as spicy as I thought it would be.   I am thinking if you want it spicier then you can adjust the amount of Thai chili sauce that it calls for.

Thai Barbecued Salmon

Ingredients:
  • 2/3 cup barbecue sauce
  • 1/3 cup Thai chili sauce
  • 1/4 cup minced fresh cilantro
  • 4 salmon fillets (1 inch thick and 4 ounces each)
Directions:

In a small bowl, combine the barbecue sauce, chili sauce and cilantro. Set aside 1/4 cup for serving.
    Cook salmon on an indoor grill coated with cooking spray for 4-5 minutes or until fish flakes easily with a fork, basting frequently with sauce mixture. Serve salmon with reserved sauce. Yield: 4 servings.

I am not sure where I originally found this recipe but it makes for a nice summertime dinner dish.

1 lb skinned salmon fillet
1 tbl olive oil plus
1 tsp olive oil
1/4 cup fresh lemon juice
1/2 tsp kosher salt
2 tsp Asian chile sauce (sambal oelek) or more to taste
(or 1 tspn dried hot red pepper flakes)
4 cup cooked couscous or rice
1/2 bn watercress rinsed, separated
(or 2 tightly-packed cups washed, torn fresh spinach)
18 cherry tomatoes halved
1 cup minced fresh cilantro or Italian parsley

Instructions: Seafood Alternatives: catfish, snapper, halibut, mahi mahi, swordfish Rub each side of the salmon with 1/2 teaspoon of the olive oil. Grill the salmon over a medium-hot fire for 2 minutes per side to sear the outside. Continue grilling over moderate fire toward the edge of the grill until opaque through but still moist, 2 to 3 minutes per side. Alternatively, broil the salmon in the oven.

Stir together the lemon juice, salt, chile sauce and remaining 1 tablespoon oil for the dressing. In a large bowl, toss the couscous, watercress, tomatoes, cilantro and green onions.

Pour the dressing over the couscous mixture and toss well to coat. Break the salmon into large chunks, discarding any bone, and add it to the salad. Gently toss and serve.

This recipe yields 4 servings.

Comments: Spiked with chile sauce and citrusy cilantro, quick cooking couscous and salmon are the perfect foils for these fiery flavors of the East. Serve with warm, crusty bread.

I am always looking for new recipes for Salmon.   I found this recipe a number of years ago and have yet to try it myself.   I have tons of recipes that I  have seen and said oh that looks good why don’t we try it sometime.  Maybe I will make this next time I do Salmon.

Ingredients

  • 4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
  • 4 (4 to 6-ounce) pieces salmon
  • 1/4 cup sliced almonds
  • 1/4 cup purchased pesto
  • 2 tomatoes, sliced

Directions

Preheat the oven to 400 degrees F.

On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.

To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.

Growing up in the south Grits have always been a favorite dish of mine. About 10 years ago my dad served us a dish of Shrimp and Grits that has since become a favorite dish as well. So the other day when I was looking for a new Salmon Recipe I located this recipe below. I have yet to try this dish but I cannot imagine it not being good since I am a fan of Grits and Salmon as is my husband. So once he gets on a better schedule at work I think I will make this for him. The recipe calls for quick cooking grits not instant. Yes there is a difference. My preference would be to use stone ground grits which take longer to cook but I think taste even better than the quick cooking variety. If you cannot get stone ground then I would use the quick cooking grits.


Herb Broiled Salmon over Parmesan Grits

Ingredients

For the Grits

* 2 1/2 cups chicken broth, divided
* 1/2 teaspoon salt
* 1/4 cup finely chopped white onion
* 2 cloves garlic, minced
* 1/2 cup cream (half and half)
* 3/4 cup grits (not instant)
* 1 tablespoon olive oil
* 4 ounces mushroom, chopped
* 1/4 cup parmesan cheese

For the Salmon

* 4 (6 ounce) salmon fillets
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 1/4 teaspoon dried thyme

Directions

1.Preheat broiler.
2.In a small sauce pan, combine 1/2 cup chicken broth with onion, salt and garlic.
3.Bring to a boil; reduce heat and simmer 5 minutes (until onion is tender).
4.Add remaining broth and bring to a boil.
5.Gradually add grits, then cream, stirring with whisk until blended.
6.Cover and reduce heat to simmer for about 10 minutes (or until done).
7.Saute mushrooms with oilve oil in a nonstick skillet for about five minutes or until golden.
8.Stir mushrooms and parmesan into grits.
9.Set aside and keep warm.
10.Sprinkle salmon fillets with salt, pepper and thyme.
11.Place fillets skin-side down on broiler pan coated with cooking spray.
12.Broil 10-15 minutes (depending on thickness of fillets and individual cooking prefs).
13.Remove skin from fillets, discard skin.
14.Serve immmediately on top of the grits.

I originally found this recipe over at Louis Kemp website. It is one of my husbands favorite recipes. I think I will break this recipe out when it gets warmer
Ingredients
2 pkgs. (8 oz.each) Louis Kemp Crab Delights
3 cups dry bow tie pasta
2 tbsp. lemon juice
6 tablespoons non-fat sour cream
1/4 cup light mayonnaise
1/2 teaspoon black pepper, sugar, dry dill weed
salt to taste
1/2 cucumber, seeded and chopped fine
2 green onions, chopped
1 stalk celery, chopped fine
1 small carrot, grated
1/4 cup frozen peas cooked (optional)

Instructions
Cook pasta according to package directions. Rinse under cold water and drain well. In a large bowl whisk together the lemon juice, sour cream, mayonnaise and seasonings. Add cooked pasta , Crab Delights and vegetables. Toss together well and serve.
